Good Morning Casserole
|4||slices bread, crusts trimmed, cut into quarters||4|
|1-1/2 cups||milk||375 mL|
|4||slices turkey bacon, diced and cooked||4|
|1/2 cup||shredded fat-reduced Cheddar cheese, divided||125 mL|
|1/3 cup||sliced white mushrooms||75 mL|
|1/4 tsp||salt||1 mL|
|1/2 cup||frozen hash brown potatoes, thawed||125 mL|
Arrange bread slices in pan, overlapping slightly; set aside.
Add mushrooms and salt.
Pour mixture over bread slices. Sprinkle potatoes and remaining cheese over egg mixture.
Bake until lightly browned and knife inserted near centre comes out clean, about 35 minutes. Serve immediately
