Western Sandwich

Western Sandwich
2 tsp butter 10 mL
2 tbsp minced green pepper 30 mL
2 tbsp minced ham 30 mL
1 tbsp minced onion 15 mL
2 eggs 2
  Salt and pepper, to taste  
1 medium-sized soft roll 1

Method:
Melt butter in a small non-stick skillet over medium heat. Add green pepper, ham and onion. Cook, stirring, until the vegetables are tender, about 3 minutes; set aside.

Whisk eggs in a small bowl; add salt and pepper. Pour eggs over vegetable mixture in skillet.

Cook over medium-high heat until eggs are set, about 2 minutes.
Turn and cook other side, about 1 minute. Transfer omelette to the roll, folding in the edges. Serve immediately.
